I had a great lunch at 4-T’s Bar-B-Q and Catering in Forney, a half-hour or so East of Dallas.
Newly-named to the Texas Monthly Top 50 list, it was my first trip out to Forney and it sure won’t be my last.
Pitmaster Mike Thomas has been smoking meat in Forney for almost seven years and he’s really got things dialed in.
I ordered the two meat plate ($11.49) with moist brisket and sausage and I added two ribs ($2 each).
All three meats were perfectly cooked and seasoned.
The brisket had a nice black bark with a hit of salt and pepper. The meat was moist and the fat was nicely rendered.
The ribs were great, with a sweet-sauce sauce mop over the rub, but not overly sticky. They were just right and very meaty. A bargain at $2 each.
Sausage was good. I was sad to find they were out of jalapeno, so I settled for the regular version which was not disappointing at all.
The plates come with two sides. My choices, green beans and coleslaw were good choices.
My lunch partner opted for a piece of chocolate pecan pie and he was nice enough to let me try it.
I was very pleased, but boy was it rich. You might want to share a piece with someone.
Mike said they’ve had a good bump in business since the Top 50 list came out. He made 20 briskets for Saturday’s service and they were sold out by 1:30 p.m.
My advice is to get there early if you’re headed to Forney on Saturday. I visited at 12:30 p.m. on a Wednesday and every table in the dining room was full, but there was still plenty of meat left.
