Reflections after a decade on the BBQ Trail

Snow's BBQ pitmaster Tootsie Tomanetz works the smokers during the Posse's 10th anniversary trip. (Photo ©Tom Fox/Texas BBQ Posse) Anniversaries are often times of reflection. So it was for the Posse on Saturday when we visited Snow’s BBQ and Louie Mueller Barbecue 10 years after our very first trip to these Central Texas meccas of smoked meat. In many ways nothing has changed. The food was still terrific. Snow’s brisket remains among the best around and my first bite of the beef rib at Louie Mueller’s was the best mouthful of barbecue I’ve eaten in a long, long time. Posse…

The Speedtrap BBQ Tour - an early look

Wheels up this morning at 6:30 a.m. from Posse pitmaster Marshall Cooper's driveway in North Dallas. Our first destination was breakfast at Snow's BBQ in Lexington, which has become a ritual for us when starting a tour in central Texas. To be followed by four more joints and 500-plus miles on the Texas BBQ Trail. Anticipation was building as we…

Do Texans need some Q-schoolin? It's your turn to tell us what you think

Posse pitmaster Marshall Cooper is a man of conviction, especially when it comes to smoked meat. After mulling our recent Roots of Dallas BBQ Tour for several days, he was still stunned by the lack of smoke taste we found on the barbecue at the original Sonny Bryan's, Odom's, Dickey's and Peggy Sue's. Why don't some of the most popular…

Where's the smoke? the Posse asks after visiting historic Dallas joints

The wooden sign on the wall at the original Sonny Bryan's Smokehouse on Inwood Road says "Real Texas Bar-B-Que." It's next to a large black and white photo of Sonny himself. The late Dallas BBQ patriarch, dressed in a white shirt, white apron and white chef's hat, has a gentle smile on his face and a big carving knife in…

Roots of Dallas BBQ Tour

For our first BBQ tour of new year, a dozen Posse members met this morning to retrace some Dallas BBQ history. We started at the original Sonny Bryan's Smokehouse BBQ on Inwood, followed by stops at Odom’s Bar-B-Que, the original Dickey's Barbecue Pit and ending at Peggy Sue BBQ in Snider Plaza. Our past tours have averaged anywhere from 200…

More historic BBQ photos from the files of the Farm Security Administration

Here's another set of barbecue photos from the collection of the Farm Security Administration (FSA) photo archive. These were shot in 1940 by photojournalist Russell Lee at a free community barbecue picnic on Labor Day in Ridgway, Colorado. After my blog post last week on FSA images of Texas BBQ, I spent some more time going through their photo archive…

Posse favorites: The Tipsy Texan sandwich at Franklin BBQ

The Posse is always keeping an eye out for the greatest sandwiches offered on the Texas BBQ trail. Such was the case the first time we saw the massive $2.75 chopped beef sandwich at Meshack's BBQ in Garland, the BBQ Po Boy at Loco Coyote Grill in Glen Rose or my favorite, the Brother-in-Law sandwich at Stanley’s Famous Pit Bar-B-Q…

First visit to JMueller BBQ in Austin

Last week, I joined Posse members Marshall Cooper and Jim Rossman for a quick roadtrip to Austin. Marshall was returning a portable smoker to Franklin Barbecue pitmaster John Lewis, who he has been helping on the national BBQ cookoff competition circuit. It was a great excuse to grab a bite at both Franklin and the new JMueller BBQ while we…

The Sheriff and her Posse

The Texas BBQ Posse cook team poses with Dallas County Sheriff Lupe Valdez during the Blues, Bandits and BBQ cook off held in Oak Cliff's Lake Cliff Park. We did well (more details to come), placing second place in brisket, pulled pork and chicken. I'll be posting more photos shortly, but here's one of our favorites. Thanks to the amazing…
