A ‘quantum shift’ in the BBQ universe, all because of Texas

A couple who bailed on the long line at Franklin Barbecue checks out the menu at Micklethwait Craft Meats in Austin. (Photo ©Chris Wilkins/Texas BBQ Posse) It was 10:40 on a recent Sunday morning, 20 minutes before Micklethwait Craft Meats opened for business. There was no line, just five people sitting at tables in front of the little yellow trailer. Across the street, a couple walked toward us from the direction of Franklin Barbecue, a few blocks away near downtown Austin. “Did you just come from Franklin?” I asked when they arrived. “Yes,” they answered. “It didn’t look like that…

Side dishes are better than ever at Texas BBQ joints

Sides like these from Micklethwait Craft Meats, top & middle bottom photos, and Tejas Chocolate Craftory are changing the Texas BBQ scene. (Photo ©Chris Wilkins/Texas BBQ Posse) In the early years of the Posse, we didn’t care much for barbecue side dishes. You know, the standard potato salad, coleslaw and beans that often accompany smoked meat. We even had a no-side-dish rule, meaning we almost never ordered anything but meat. When you hit a half-dozen or more joints on a weekend tour, you want to reserve all your eating space for brisket, ribs and sausage. To us then, side dishes…

Why do we have nicknames for BBQ pits?

Owner & pitmaster Grant Pinkerton poses with his matching Klose pits "Waylon" & "Willie" at Pinkerton's BBQ. We met “Waylon” and “Willie” recently at Pinkerton’s Barbecue in Houston. “You know how to tell the difference?” Grant Pinkerton asked, setting up a punchline about his two big Klose pits. “Willie is always smoking,” Pinkerton said. Why do we have nicknames for BBQ pits and other machines we love? A few years ago, The Atlantic magazine tackled that question and basically determined that we apply human characteristics — names — to machines because it makes us think the machines work for us. Maybe.…

Killen’s will be #1 on Texas Monthly’s Top 50 BBQ list, the Posse predicts

Diners wait for Killen's BBQ to open on a Saturday morning in Pearland, a suburb of Houston. Be bold. That advice from an old boss recently ran through my head here at Posse HQ as we contemplated stepping off the barbecue cliff. We took the step. Yes, we are predicting that Killen’s Barbecue in suburban Houston will be No. 1 on Texas Monthly’s highly anticipated list of the Top 50 BBQ joints in Texas, displacing the legendary Franklin Barbecue in Austin. It shouldn’t take long to know whether that call is indeed bold or just plain boneheaded. The list will…

Video surprise at Stiles Switch BBQ in Austin

With the launch of the new Posse website, we'll be doing videos including interviews of Texas pitmasters along with "how to" cooking videos. On our trip to Central Texas last week, we shot two of the top pitmasters in the state, Esaul Ramos of 2M Smokehouse in San Antonio and Lance Kirkpatrick of Stiles Switch BBQ & Brew in Austin. We plan to have those interviews posted over the next week or two. When shooting video at a busy BBQ joint you must be prepared for the unexpected, as happened when Gary and Lance were talking about the ever-exploding Austin BBQ scene.…

The Barbecue Chronicles: Austin is the new Lockhart BBQ Tour

The Texas BBQ Posse dives into a spread of sausage, brisket, ribs and turkey at La Barbecue in Austin. (Photo by Tom Fox/DMN) Story by Gary Jacobson It would be easy to get carried away by what’s happening in Austin barbecue. Amid a fertile startup environment, young pitmasters are creating a smoked-meat renaissance, using only wood-fired pits and adopting old-school ways to cook for a new generation. A case could even be made that Austin has replaced Lockhart as the capital of Texas barbecue. We’ll leave that big-think stuff for another time. This is a story about…

Today in the Dallas Morning News: The BBQ Posse's Austin BBQ Tour

Here's a look at our Austin BBQ Tour story in today's Dallas Morning News travel section. This is the Posse's second installment from the Texas BBQ trail in the DMN this year. Our Best of Texas BBQ project was published in early March. The tour grew out of a growing suspicion that Austin might be quickly replacing Lockhart as the state's barbecue capital. And nothing we experienced on that day disproved the theory, every stop on the tour was nothing short of sensational. Click here to see the story, slideshow and video links on the DMN Travel section of dallasnews.com. Also, you can join us…

See the photos from the Posse's Austin BBQ Tour - The Fantastic Mr. Fox strikes again

Dallas Morning News staff photographer Tom Fox at work on the Austin BBQ Tour. (Photo ©Chris Wilkins/Texas BBQ Posse) When you're on the road with the Texas BBQ Posse, it's kind of like being in the middle of a media storm. The Posse is mainly made up of Dallas Morning News writers, editors, photojournalists and their friends. Yes, we have been accused before of being the BBQ paparazzi. On the recent Austin BBQ Tour we had nine journalists and artists in the group, including five photographers. One of those was award-winning DMN staff photographer Tom Fox. Tom has captured numerous…

Mueller ties run deep in BBQ joints on the Posse's Best of Austin Tour

A portrait of the late Bobby Mueller, shot by daughter LeAnn, watches over La Barbecue. (Photo by Tom Fox/DMN) Follow the roots of most of the joints on our recent Best of Austin tour and they trace back, directly or indirectly, to Texas legend Louie Mueller and his place in Taylor. LeAnn and John Mueller,  grand children of Louie and children of Bobby, are the most direct links. LeAnn owns La Barbecue. John is the pitmaster at John Mueller Meat Co. They used to work together but then there was that infamous blow up. Aaron Franklin, owner of Franklin Barbecue,…

BBQ is..... A photo project by Posse member Daniel Goncalves

Lance Kirkpatrick, pitmaster at Stiles Switch BBQ & Brew. (Photo ©Daniel Goncalves) Here's a sneak peek at the beginning of an extraordinary photo project by Dallas-based editorial and commercial photographer Daniel Goncalves. As most of you know by now, the Posse is a pretty creative group, made up of Dallas Morning News photojournalists, writers, editors and their friends. With this project, Daniel has raised the creative bar for the Posse. Daniel writes about the concept: I love people as much as I love food. The Posse has introduced me to great people and incredible BBQ. While on tour I've been…
