Pit Talk: The 7 essentials of damn good barbecue

What makes good BBQ? I consider successful barbecue to be the combination of seven basic characteristics happening at once: tenderness, juiciness, smokiness, proper fat rendering, enhanced rub, good exterior bark, all with a firm texture. Good-tasting brisket, ribs and pork butt are s-l-o-w smoked at l-o-w temperatures using a real wood fire. Most importantly, BBQ should be left undisturbed on the pit and should not be hurried at all. Just finished the February Texas Monthly cover story about Aaron Franklin and John Mueller and it is a very nice read. Posse member Mike Gagne even thinks the tale of the novice pitmaster (Franklin) and the troubled master (Mueller) would make a great movie. Tobey Maguire as Franklin? Sean Penn as Mueller? Texas BBQ royalty were on hand as friends and family of Lockhart Smokehouse joined together on Sunday evening to celebrate their first anniversary. We were all there to congratulate Jill Bergus, husband Jeff and pitmaster Tim McLaughlin on their success. Lockhart Smokehouse has played a major role in the renaissance of Dallas barbecue, along with Pecan Lodge in the Dallas Farmer's Market. Roots of Dallas BBQ Tour

For our first BBQ tour of new year, a dozen Posse members met this morning to retrace some Dallas BBQ history. We started at the original Sonny Bryan's Smokehouse BBQ on Inwood, followed by stops at Odom’s Bar-B-Que, the original Dickey's Barbecue Pit and ending at Peggy Sue BBQ in Snider Plaza. Our past tours have averaged anywhere from 200 to 600 miles of driving. This one was 16 miles from the first stop to the last. These were shot in 1940 by photojournalist Russell Lee at a free community barbecue picnic on Labor Day in Ridgway, Colorado. Excuse me if I'm late to the party, but I just learned a new word: shigging. It means stealing, or attempting to steal, someone's barbecue secrets. The term seems to have come out of the BBQ competition circuit, but also works for joints and backyard pitmasters. It looks like Off the Bone in Forest Hills is expanding to a second location. The acclaimed joint run by Eddie Brown is a DFW favorite of many of the Posse members. No, this isn't another rant against gas-fired bbq

First off, Johnsonville's Big Taste Grill, pictured above, uses propane. Don't even think about wood...or charcoal. But doesn't that machine look cool! The semi-tractor-hauled cooker weighs 53,000 pounds, is 65 feet long, 20 feet high and 6 feet in diameter, according to materials sent to us by Johnsonville, the sausage company. A dozen cooks can grill 750 brats at a time. The lid alone weighs 6,000 pounds and is operated by a hydraulic system.
